Harper has been dealing with some gut health issues lately, and is limited on the kinds of food that she can have. After searching and tweaking through some cookie recipes, I have found one that will let her feel like she is having a treat, while also still being gut friendly.
Ingredients:
1 cup natural almond butter
1 Tbsp organic coconut oil
2-3 Tbsps baking stevia/truvia
2 eggs
Directions:
Preheat oven to 350 degrees
Place the almond butter and coconut oil in a microwavable safe bowl and melt for about 40 seconds. Mix well. Stir in 2 eggs, then add the stevia. Depending on how sweet you want it will determine if you add 2 or 3 Tbsps. Mix ingredients well.
Once combined, take ice cream scooper and scoop mixture onto a baking sheet lined with parchment paper. Bake for 12-13 minutes.
Makes 10-12 servings
